Salmon - A good side, don't bother with individual fillets, olive oil and seasoning then loosely wrap in foil. Bake for about 30-40 minutes at 200oC
 
Asparagus - Steam for about ten minutes, depending on size, in water with about a tablespoon of fresh lemon and NO SALT.
 
Hollandaise Sauce - Put a couple of bay-leaves and some whole black pepper corns in a small pan, add a generous amount of good white wine vineger then gently reduce until you are left with around a teaspoon of liquid. Add the liquid to three egg whites and place over a baine-marrie. Gently whisk until it starts to thicken then add 250g of softened butter; a little at a time. Whisk constantly as you add the butter, if it curdles take it off the mixture and whisk in a couple of ice cubes to bring the mixture back. Before all the butter is added, season and check for taste. If required add a little more vinegar or less butter to get the right amount of piquancy.
 
Roast Potatoes - Peel and stick em in a hot roasting try with oil. About an hour and don't forget to sault them at the end.
 
Salad - What ever you have - baby leaves, tomotoe, cucumber, paprika/pepper and spring onions make a good mixture.
 
Mustard Vinaigrette - In a screw top jar: salt, pepper, mustard powder and sugar and quarter fill with good vinegar [a little bit of balsamic as well is good]. Shake. This ensures the ingredients combine quickly. Top up with extra virgin olive oil and shake well. [the jar not you]
 
Ensure no-one is in the room and nom nom nom.
