GeneralWhiskey Sour Pin
Tuesday, February 22, 2011 2:07 PM
Ingredients
Whiskey Sour

* 2 ounces bourbon
* 2/3 ounce lemon juice
* 1 teaspoon superfine sugar

Shake the bourbon, juice, and sugar well with cracked ice, then strain into a chilled cocktail glass (unless you happen to have a Sour glass). Resist, if you can, the impulse to decorate lavishly with fruit, although a maraschino cherry will raise no eyebrows.

Drink slowly, with a friend.

GeneralFlambé Cuban Bananas PinPopular
Tuesday, February 1, 2011 11:42 PM
Ingredients:
(For Each Serving)

2 Large, slightly over-ripe bananas (Try to get ones that have some blackening on the skin)
Knob of butter
One tablespoon of Brown Sugar (Preferably Demerara, but even white caster sugar if no brown available).
One shot of dark rum
1 tea spoon of honey
Dash of double cream

Method:

Slice the bananas in half, lengthways, then chop into half crossways.
Melt the butter in a hot pan, and as soon as it starts to brown, add the banana and sugar.
Keep everything moving.
Turning occasionally, fry until the bananas start to brown and immediately add the rum.
Stir a little mix, then flambé, (use a lighter, but be careful).
This will burn off the alcohol but leave the richness of the rum.
Serve on warmed plates, drizzle honey over the bananas and add a splosh of double cream for 'mopping' the juices.

Enjoy.
