How can I export XML Dynamics CRM Workflow uidata in a human readable format

I want to document our Workflows and I am having difficulty being able to export and then extract the uidata portion of them.
 
I use the CRM Customization export and then try to filter through the output to find parts of them to document.
 
I have managed to collect the JavaScript information but the logic of a workflow seems to be a "guarded" element. All I get is encoded or encrypted string data.
