reading pdf file(file is in marathi or hindi language(indian))

I am working on pdf file in that i want to read pdf file .pdf file is in marathi language and font is kiran how can i read that file in java.or how can transfer data from pdf to any txt file
please i am do that by using itext but i heard itext only support Arabic .how can i do that

Keywords to look for:

I18n
Multi Language support
UTF-8 Encoding

Please do a little research on these. There are multiple languages, that have at least some characters that are not ANSII. The problem is quite common.
