That is not a problem, actually. Just perform the process sequentially on the LDRs e.g.
  1. Sample and convert LDR1, take the result from ADC1BUF0, store it in variable, say ldr1.
  2. Sample and convert LDR2, take the result from the same buffer ADC1BUF0, store it in the variable ldr2.
  3. ...
