As long as both monitors are the same resolution VirtualPC will let you use both. Mine aren't.

I just started using a virtual machine in some of my classes this summer, I hadn't before that.
I now have Win7 on a virtual machine at home so I can try it out. (I don't like Win7 enough to switch over, and there is no compelling reason for me to at this time.)
On the other hand, I'm considering doing up a Windows Server system and using virtual machines for development and such.

It is a wild wild west, the forth choice "icYes, one or more of our production server applations run on a virtual machine" stole it.

I typed this on a Lenevo thinkpad with the worlds worst trackpad that I can't see an easy way to disable, so occasionally my typing goes astray.
I am firmly of the belief that one should blame one's tools given half the chance. Bad Lenevo! Bad!

However, with custom hardware, it's a pain. USB now seems widely routed through, but it's still a gamble to get it to run when it's hooked to your local PC. Firewire - no chance.

When I used to use VirtualBox it would really annoy me that USB support which, according to Sun, works. In no way does VirtualBox USB support work. When I tried to attach it to the virtual machine, my Windows host would bring up the Install New Hardware wizard, and whether I "installed" it or not, it would never work in VirtualBox

Funny, I use a VM with Expression Studio and VS 2008, with hardware virtualization turned on, you can't tell the difference between the VM and the host. But I also have seen big performance differences sometimes in the past.

I've been using VMWare for several years and just recently installed a VMWare with Win7 and VS2010. Works absolutely fine, not much performance loss. Just give the VMs plenty of RAM (4GB in my case).
