I've been able to find loaded DLLs, entry point, base address and stack address from Process Environment Block.

Now I'd like to find where the Import Address Table and Export Address Table addresses are located in the PEB, how could I do that?

I've already checked the structure, but couldn't find the IAT address in it, but I have read multiple times that PEB structure has the address stored but I can't seem to find it, hence the question.

Then those are the places to go for more information. Looking at the structure it is most likely stored in one of the reserved fields. Information about internal OS data is only available to people who get a developer licence from Microsoft.
