Bundy OP, great stuff. Don't like YouTube so haven't looked at it yet. Should I?

What the Elephant??
I'm trying to debug some code, but Windows update comes up with it's "we're going to restart! Too bad you can't stop me!" thing so I save everything and go have a drink. A while later I come back and try and resume debugging but my localhost won't start up. And then I can't find my IIS console shortcut on my desktop. And the inetsrv folder in C:\Windows\System32 is empty.
W. T. F.?
Anyone else seen this? I've gone back into "turn Windows Features on or off" and renabled everything, and it's now evidently fetching some files from windows update.
I'll keep you posted...

Did you go to Anniversary update?
There are hidden features which are removed to force you to buy them.
Company I work for had this issue and has not gone up to Anniversary update for this reason yet.
However, I'm not sure IIS is one of those items.
edit
Oh, look, I googled "anniversary update iis" and got a reddit where numerous people saying same thing
Windows 10 Update totally Removed IIS and botched my DEV machine : Windows10[^]

I thought I'd updated to Anniversary Edition (and seriously Microsoft: pay someone to think up decent names, please) but evidently I hadn't.
I have AE on my office machine and no problems there.
Funnily enough I searched far and wide for others who had the same issue. My Googling skills (and possibly my Binging skills - ahem, Microsoft) are obviously rusty.

It seems that MS is trying to alienate developers with things like this.
Either that, or their various teams are incompetent.
Or both.
What do you get when you cross a joke with a rhetorical question?
The metaphorical solid rear-end expulsions have impacted the metaphorical motorized bladed rotating air movement mechanism.
Do questions with multiple question marks annoy you???

My vote is: Both!
Unfortunately.

Hi Chris, have you thought setting the option in the Win10 update-facility that lets you define a range of hours in which (theoretically ?) it will not attempt to update/restart ?
Settings/Update & Security/Windows Update/Change Active Hours
«There is a spectrum, from "clearly desirable behaviour," to "possibly dodgy behavior that still makes some sense," to "clearly undesirable behavior." We try to make the latter into warnings or, better, errors. But stuff that is in the middle category you don’t want to restrict unless there is a clear way to work around it.» Eric Lippert, May 14, 2008

I have, but that assumes you have inactive hours

So, I guess active hours from 1 minute to midnight to midnight is out, then ?
Then there's that strange option in that same settings ui, under Advanced Options: "Defer feature updates:"
"... When you defer upgrades, new Windows features won’t be downloaded or installed for several months."
I wonder what the reason for that no-options option is, and why they are saying, in effect: "like later, dude."
cheers, Bill the Inactivist

When I installed AU, I had the issue where the URL Rewrite module goes for a Burton and has to be reinstalled:

But I've not had an update remove IIS so far.

I have met Messrs Gordon & Schweppes only once in the last month and then just fleetingly at a party over the weekend; I had to drive.
I miss those guys!

I thought that was why you could only get £8 of diesel in the tank: the rest was full of smuggled gin.

Nah, the £8 tank is because derv is 9p/l.
Yesterday in the market I passed on buying avocados as the 50p each price was too high.
Local wine and beer isn't too bad, but spirits are very hard to come by. There is a retailer out of town where I can get pretty much anything, but it's a 2 hour round trip.
Oh, at the weekend we had fresh langostine for about £10/kg.
