Assuming you were replying to me, I thought I ought to have a look myself: well, it was a bit unclear, even after reading help:
1. Create a new empty file
2. Select Options>Control properties, and under the record tab select 'Monitor input' - then you can see if any signal is seen. Under device tab, select record device (probably audio input).
3. Now the VU meter should show any sound signal (I played music with Media player). Get record levels low enough.
4. Press red 'record' button and you are off...

Well, I could not believe that the feature had been dropped since my vn (5.1), so downloaded and installed the latest (v6.23) on to my W7 PC, and it appears much the same as v5.1. I grabbed screen shots of the Control properties window,, but don't know how to post them here (probably not allowed, although they are only 20 & 30 kB PNG files). I have turned on private replies in case that lets you email me directly for the screen shots.

Assuming you're bringing this up because you already have the means to record video along with the audio you want...you could always use that and then just use something that can extract the audio.
Even Winamp will do that - right-click an MP4 (or whatever), Send To, Format Converter, MP3.

There are online tools to convert video to audio.

I haven't used Goldwave in quite a while, but I thought one could record with it - and its help file says one can (old vn 5.10). I have also used MediaCoder to convert videos, and it can apparently record also (but its user interface is fairly complex).
