I have the original Nexus 7 too and I wondered when they'd finally release a version which was worse than previous.
It often seems this is every software's destination: to continue adding functionality that is so fantastic that it is unusable.
Anyways, I'm in the US and I have never been notified of the 5.x version and am just lucky that way. I'm still on 4.4.4.

The problem with making back-ups of app info and config is that some of the settings are based on the android version, so the apps won't work with those settings if you downgrade.
For non-app files, I'd just use ES3 or total commander to upload the files to a PC.

My solution for this is to not put anything worth backing up on my Android device.
And frankly, based on my experience with Android so far, there's no valuable information I'd *want* to even give it in the first place.
