I realize that we USians have a reputation for getting things wrong, but I am still surprised when it is fully deserved.
The "special" at the company cafe (note the lack of accent over the e) today was listed as "pub style fish and chips".
I wasn't terribly surprised to see potato chips rather than french fries, just disappointed.
So, OK, it's not really pub style (fish and chips) , it's more like (pub style fish) and chips .
But it also came with what was listed as "cole slaw". I have no idea whether or not cole slaw is a traditional pub item, but I bet you that if it is, it isn't lettuce-based -- that's right, it was actually a small garden salad soaked in some sort of dressing.
You'll never get very far if all you do is follow instructions.

Coleslaw is white cabbage and carrot, grated, and mixed with Mayo and pepper.
It's good in sandwiches, and very good in a kebab with serous hot chili sauce. With fish and chips? No, thank you, but no.

There are of course variations but, and I checked to be sure, a non-trivial item in most recipes is vinegar. Actually the ones that don't have vinegar tend to be weird (pineapple?)

I just had a quick google, and didn't find any recipes with vinegar on the first page: 1 with lemon juice, a couple with mustard, and two with yoghurt(? ?) but no vinegar. Maybe it's a local variation?

I'd expect it to be a bit vinegary. But maybe that's just because I vinegar my chips so the coleslaw alongside gets some too.
(It works really well with fish and chips actually, you should try it one day.)

The only thing coleslaw is good in is a dustbin, possibly a compost bin.

What are potatoe chips then? Big chunky bits of potatoe? If so thats more English than french fries, whcih are skinny little things.
Re cole slaw, its an American dish frlom New York at the time when it was New Amseterdam and is originally kale sla, Dutch, for a cabbage salad, so you are bang on, it has to be cabbage based, (kale is a cabbage type plant)
Has to e beer batterd fish though, nothing else will do. And even better a nice yeast brown beer rather than a lager. Get that right and its a dish fit for a king!

Sounds like you are describing what would be called fish, crisps and lettuce in Blighty.
Any pub serving that would probably not last very long - I take it a manager suggested "fish and chips" and some poor lackey didn't understand what 'chips' are in the UK.

Do you mean chips in the USian sense - wafer thin crispy things (we call them crisps) or what we call chips- like fat french fries? If it is the latter they are better if fried in the same oil as the fish as they take the taste better. Even better if they are both cooked in beef dripping.
If you think coleslaw is worrying, look up mushy peas, though I love them
