In our shower stall, I have "my side" with a bottle of 2-in-1 shampoo and on my wife's side, rows of bottles with shampoo, conditioner, scrubs and other stuff.
This morning I found out my shampoo bottle was empty, which turned out to be because my wife had been using it since she was out of shampoo. I look around and find some liquid soap, so I use that to wash my hair and since normal soap is not the best for the hair, I grab the nearest bottle of conditioner to counter the soap thing. That seemed to work great, my hair is much softer than normal. Now I am wondering what my wife needs the other 15 bottles of conditioner for...

Bad idea!
Never wonder why the female gender needs multiple hair things or multiple shoes, purses, perfumes, etc. There is no answer we of the other gender could ever understand. Personally I think it's more like a law of physics - it just is. Trying to understand it will only drive you to insanity.

She needs them to counteract what each other do, e.g., shampoo removes essential oils from the hair, and conditioner puts them back.

But shouldn't one conditioner be enough? She has so many different bottles of conditioner, all opened and used to some extent. I just don't get that.

The answer is clear..
Wash, rinse, repeat, then condition.
Hence, she always uses twice as much shampoo than conditioner.
Shampoo and conditioner come in the same size bottles.
Always buy shampoo/conditioner together.. always have half a bottle left of the old conditioner.
(and of course she has to use the new conditioner as it is the same scent as the new shampoo).
