I don't know what kind of machine you're working on, but I really have more than enough system resources available that a transparent bar here or sliding animation there in my OS do not make a noticeable difference in overall performance. If you don't like the modern look, that's fine, personal preference and all, but the argument about system resources being wasted seems pretty out of date in 2017, unless company politics force you to work on a toaster that someone soldered a VGA port on.
For screenshots, I'd see it as far easier to just turn off transparency, because that's the only thing I can think of that might influence the result of the screenshot, depending on the background.
That way, you also don't get the "but my screen looks totally different!" support calls from the people you make the screenshots for and who might not be using that theme. You wouldn't believe what non-tech-savvy people get stuck on.
Also, if anything makes you look professional, it should be your skills and results, and not your toggling a setting for Office or which theme you chose for your OS.

I just tore a tab off in VS and dragged it my other monitor... and Windows minimized everything except the tab - including VS.
I'd REAAAALLLLY like to talk to the "designer" and MS who dreamed up this "feature".

You must have 'shaken' it. Press and Hold on a window tile bar and moving the mouse quickly back and forth, left to right, will minimize all other windows.

and if you shake some more, all minimized windows will be restored.

Well, at least it's easy to turn off - NOT! 
If you also want to turn off the "snap" feature, you can do it through the mouse settings.
If you just want to turn off the "shake" feature, it's time to go spelunking in the registry or group policy editor.

The one I want to turn off is the wake-from-sleep "here's a picture" feature. OK, Creators edition started obeying the "I don't want to log in every time I use my tablet" switch that Aniversary didn't but I don't want the damn picture either.
Oh,and MS: why does even the Function Key version of the soft keyboard not have a Home or End key? It does at least have Up and Down which the others don't I suppose ...

In VS2017, prior to 15.2, Start Page was under the View menu. Now its under the File menu.
I don't want to File the Start Page, I want to view it.

I hear ya. That is one of my biggest gripes with MS. FFS STOP MOVING THINGS AROUND!!!
One that REALLLLLLLLLY bugs me is they change the keyboard shortcuts to compile. In VS2016 it was F6, then in 2015 it was CTRL+SHITF+F6 something else, now in my version 2017 it's back to F6.
As far as the Start Page... I hear a lot of ppl say they disable it. I can't understand why. If the feeds are too slow then turn them off, but the MRU list and Project Options are useful.
And, in 2010 MS provided a WPF Start Page template which MS hasn't upgraded since. I once created a really useful start page but I can't now upgrade it.

But it is: it's F5, and it always has been, in every version of Visual Studio I can remember, at least since "Visual Studio .NET" in 2002. 
EDIT: Correction - F5 is Debug.Start.
Build.Compile is Ctrl+F7, and Build.BuildSolution is Ctrl+Shift+B.

The VS2012 version of the documentation[^] shows how the mapping (used to?) differ depending on which scheme you selected when you first started Visual Studio.

For you it is. It's F6 on my Home PC and both my work PC's. And the other Dev's here say the same.
That right there is my point. It should be the same for ALL Visual Studio installations everywhere.
