I mean how hectic can work really be, you should have SOME time for the ones you love? 
Loved ones > work, and so shall be the whole of the law.

This is happening almost every weekend.
In her language, going out means going for a picnic, to a resort and chill out for 4-5 days, shutting down all office works. 
And the point is, she isnt deprived of all these, at all. It's definitely not her problem. There could be some other reasons. Will come to know some other day when she's back to normal. There's a waiting time to get to the actual facts. lol
She knows it well, that I'm not at fault now. But you see, that's how it works. When a quarrel is picked up, I cannot point out the logic/fact/rational. It works beyond all these.
But she's nice in general, once in 3-4 months this kinda turbulence happens and I need to sit and investigate what the heck would have happened.

That's what women are known for I guess 
It is believed they keep a woman who tells you what's wrong captive in Area 51.
Another theory is that they've developed a microwave that heats your food instead of your plate.
Either of those would be truly alien indeed...

Very true! That's why I never looked for another option. I know it can easily become "From the frying pan to the fire". I'm completely okay with the pan. My butts are used to this now

No, she can't take him out. That's not her goal. She wants to be taken out. At once. The whole show appears irrational, but it's actually so clever that many men never quite get how they are being manipulated. She hopes to get him angry or defensive, because in both cases she instantly 'wins'. If he gets angry, she will turn it against him and graciously give him a chance to make up for it. Same if he gets defensive, but without the drama. You can't always have it all. Staying calm and insisting on going ahead as it was agreed is the only way out of this.
I have lived with several Zen masters - all of them were cats.
His last invention was an evil Lasagna. It didn't kill anyone, and it actually tasted pretty good.

Sounds like you are in the wrong here. Unless you are purposely trying to avoid the wife and kids, I would check yourself before you wreck yourself.
Advice from someone who has been married for more than 20 years. Mostly happy except for the times I did not check myself.

Okay, to keep it balanced let me share what I've observed with myself.
The one that's happening frequently is this:
When my energies are high, I tend to be open with my feedback.
For example, If I didn't like the way she handles kids behaviour.
I say "Okay, but that's not how it should be handled".
She goes mad when I don't join her when she's preaching the kid. She takes this very serious. It gets into her journal.
I blame it on my energy levels. When it's high, I gather more courage and speak out on the spot, when I'm very sure it wouldn't work with my wife.

Well this is way out of my realm of comfort. I can read/listen to your issues but I am the last person on earth that should be giving marriage advice (not sure you are actually asking for advice versus just venting.)

Geez, man. You said she's had a couple of months of hard work as well, and may be she's not able to take it as well as you do. Just relax, and let her vent some steam. I'm sure she'll understand when you go off your rails as well.
You should be able to yell at each other from time to time, yes? And don't make it a question of who is right, because she's always right.
