Probably some back end services or monitoring/stealing app developers' users doesn't require user interaction.
Most probably many users might not know apps are being used without their attentions.

It really depends on the target platform. On desktop, keyboard and mouse is the only reasonable way to interact. On mobile, touch and minimal keyboard. However, if we considering touch, gesture and stylus are just an extension of the mouse, then really is just keyboard and pointing devices.

To see so little support for touch screen, on of the best GUI devices yet, and for gestures, extremely powerful provided you have a touch screen. Gestures with a mouse or even click keyboard are futile, but could pass with a stylus.
Or is this only for apps currently in prod?

Not only how the interact, but also how they react. Imagine the lifeline of a mobile app that doesn't support touch screen goodness, and just has old fashioned tap or prick with a stylus and type.
I don't know of any users of my apps that use them on touch screens, but I included touch-screen in the survey because when one of my apps makes in into touch screen domain, that will always be included and well supported.

For the applications I work on, there is a log of visual 'stuff', so the users use mouse (mostly), and keyboard to enter search criteria. I've worked in an environment where touch screens were used, but in my current environment... they don't make sense.
Since we provide business applications/access... mouse and keyboard it is...

A few years back I did a demo on some new piece of software that we made.
It was intended to be used in a dirty environment and it was supposed to be operated by touch screen (as they are easier to clean than keyboard and mouse).
The whole UI had big buttons, big input fields, a custom in-app keyboard and it was basically the best (looking) software we ever made.
These guys were already using our software, but most of it was still VB6 (or looking like it).
The demo was in an office behind a normal computer and after the demo everybody (including the customer) was quite impressed.
But then the key user, who had been silent up til then, said "I'm not happy, this feels like we're going back to the 80's!"
Everybody was confused, how was this anything like the 80's!?
The user saw our confused looks and said "We've been working with touch screens for years and now you want to go back to mouse and keyboard?"
When we told him everything would just run on his touch screens like always he was suddenly very happy with the new software, it was MUCH better than what they had now.
I'm still not sure why mouse and keyboard are an 80's thing and I guess I'll never know

I was a student around 1980, and we investigated a lot of different I/O technology at that time, including touch screens and stylus input - and rejected both. Keyboards, and mice when they became available, could not be beat. I am still rather negative to touch displays (so I dislike my smartphone - and will buy a BT keyboard for it (once a tuits comes rolling by).
