Have to say I agree with the Picpoul wine, I always thought it the best wine to use, and it is particularly cheap and nasty to drink (at least it was cheap in France).

Comte emental and gruyere were my cheeses, but havent tried it in the UK, so I'll have to do some experimenting:

1) Bavarian smoked? We get this in the UK, soft, creamy, and nicely flavoured.

2) Old Gouda/Amsterdammer? Really rich and flavoursome.

3) Cheddar? What CANT you cook with this cheese? But the cheap generic type or the crystaline burns your tongue?

4) Any other cheeses in the UK worth using?


As always wipe the pan with garlic and add a bayleaf plus cornflour.


Wine or beer? How about an IPA?
