(1): there's a pun here between the words "Sein" (tit) and "Saint" (saint).
There's a french saying, "ne plus savoir a quel saint se vouer". Literally, it means: "to no longer know which saint to dedicate yourself to". Figuratively, it means, "to be at your wit's end" (translation found on http://www.orthodoxengland.btinternet.co.uk/eurofall.htm)
(2): Ciel is basically translated as "sky", but in this case "Heaven" seems more appropriate to me.

I've listened to the song about 5 times now, reading your English lyrics and the French lyrics side by side to get the feel for what it all means.

That's perfect
It means hello ("Good day"). It's like "good morning", but you may use it all day long. When night falls (5 PM during Winter ), we use "Bonsoir" instead.
