The real truth about unions is kind of simple and I've seen the cycle a few times over the years.
When they have too much power they are a menace.
When they have too little power the "employers" become the menace.
In US, many of the major "crafts" are unionized (electricians, plumbers, carpenters, &etc). They're members do very well (at my expense) but far worse, and why they can charge so much, is that they control who and how many are allowed to join. Skills are not the test - just control (and the usual good-old-boys club).
Medicine in the US is, although not officially unionized, working just like the crafts.
Basically, it's not the unions that are the problem but rather the usual cause of most problems: greed. By the employers. By the union members. Actually, without greed we'd not need the unions to begin with.

There will always be greed. The greater moral question is whether violence, or the threat of it, is used to fulfill it. Unions and licensing rely on violence and are therefore the greater evil.

Apparently your historical background on unions is a bit short sighted. When it comes to violence, it was the employers (coal mines, railroads, etc.) that employed violence (against workers). The Pinkerton's(a still-existent private police force) were particularly notorious.
As for licensing - I have observed the following (anecdotal but instructive): countries that invented little ignored patents - but once a few of them "came into their own" and started to create intellectual/manufacturerable items worth patenting they changed their behavior. Which brings back the even older memory of lawsuits demanding credit cards for those on welfare - this for unsecured credit. And how were they to pay their bills? Well - I'll save you they suspenseful ending: it would go into default and end up being paid by those who work and pay their bills. It's all part of the same cycle: "Whatever I want should be free . . . whatever is wanted from me? That must be paid for."

I also find violence by employers repulsive. Why would you think otherwise? Actually, I don't have a problem with unions, so long as membership and dealing with them are voluntary.
I don't follow your second paragraph. You mention patents, which I also oppose and would completely replace with copyright. I'm willing to pay for what I want and believe others should do the same.

Actually, at least patents eventually expire. Copyrights can last, basically, forever. Certainly in terms of a normal person's life span.
Expiration is a driving force for improvement by the patent owner.
Part of the gist of that second paragraph is that those without something of their own to protect don't want things protected; they change their opinion when it's there property (intellectual or otherwise) that needs protection.

The examples that you give (electricians, plumbers, etc.) aren't unions, but guilds. If a precondition for working as a plumber is membership in the union, then the "union" is a guild. If everyone who works as a plumber is required to join the union, (a post-condition), that is a union.
Guilds exist only for one purpose - to restrict competition. They may justify it by appealing to public safety, health, etc., (and in some cases the justifications may actually make sense).

Well - to some extent you can get a license to be most of these crafts, at least now, without union membership.
Then, of course, you still need to be hired. Large contracts and steady employment are the power now wielded: if non-union workers are hired the jobs-site is picketed (by the union in question and often the other unions). Basically, it's organized crime in my opinion. But, without the unions, the employer's upper hand over, for example, working overtime for free or they'll find someone who will, shows the other side. And this latter example? I observed (first-person) this behavior at a subcontractor where I worked.
