I am rookie in BizTalk. I would like to know what is the importance of signing any project. when does the project gets GACd.

You don't sign the project. You actually sign the assembly in order for it to be strongly-named. Basically, it's for security purposes, but the following article describes its importance in more detail.

hi,
To be more clear and simple, GAC is a storage/repository for shared Assemblies
why do we go for shared Assemblies is that the dll can be used in many applications
To Protect your assemblies from being modified/changed it is necessary that you sign the assemblies using strong name key
